Braised Soy Sauce Chicken

Hello!!!! It's been eons since I've blogged 😂 Motherhood has been keeping me busy. I gave birth in early May to #Chubbycheekschu! It's been a tricky time as we face issues with his health. By faith, he will be well.

On another note, we've a helper at home now and she does most of the cooking. It's not exactly up to standard at times but I'm thankful that we're fed and it allows me time to take care of Adriel.

Today, I decided to whip up a Braised Soy Sauce Chicken coupled with rice, egg and vegetable for dinner. I used the recipe from The Meatmen as reference. Pretty delicious I must say! Here's a recipe that I'm keeping for sure!

Braised Soy Sauce Chicken
1.5 litres water
4 chicken legs
1/2 cup rice wine
1/2 cup light soy sauce
1/2 cup dark soy sauce
2 bulbs of garlic
70g of ginger
40g rock sugar
2 tsp five spice powder
2 cinnamon sticks
5 star anise

1. Bring water to a boil.
2. Add all liquid ingredients.
3. Halve garlic and add to braising liquid.
4. Peel and slice ginger and add to braising liquid.
5. Add remaining ingredients (along with chicken that has been washed).
6. Bring to a boil.
7. Reduce to small heat and simmer for 45 minutes.
8. Remove chicken from braising liquid and cut accordingly. I drizzled some braising liquid on top of the chicken.
9. I did sunny side ups and some garlic kai lan to go with the chicken and rice.
10. Enjoy!
