Mini Egg Tarts


This is my first attempt at Mini Egg Tarts!
Egg tarts have always been one of my favourite snacks and since it didn't seem that difficult to bake, I gave it a try! I must say that it's pretty simple to prepare, though time consuming. 
I spent about 15 bucks for this project that takes 2 hours.
I used two tart moulds: the disposable ones I used in the Mini Fruit Tarts and even tinier ones Phoon Huat.
(5.90 for 12 mini reusable moulds!)

Mini Egg Tarts Recipe (Yields about 40 mini egg tarts)
Ingredients:

PASTRY
180g unsalted butter (I used butter and it was still as good!)
70g icing sugar
(I couldn't find mine so I used castor sugar, in which when you 
bite into the pastry, you can taste the grains of sugar)
340g plain flour
16g evaporated milk (I like Carnation's!)

CUSTARD
160g eggs
65g castor sugar
50g evaporated milk
210g water

Kueh Lapis Legit


Kueh Lapis Legit.. one of my absolute favourites that has been on my to-bake list for eons! It's a tough cake to bake though as it's really time consuming and you need all 3 hours of it! Once you've started baking, you're basically camping in front of the oven watching this darling delicate kueh/cake work wonders! 

This recipe is from Richard Goh and I'm an absolute fan of his. It's just a pity that school's starting soon and I won't be able to attend his classes any time soon. In any case, this recipe takes 3 full hours (sometimes more) to bake and it yields a 25cm by 25cm Kueh Lapis Legit! (:


Kueh Lapis Legit Recipe
This recipe yields a 25cm by 25cm cake/kueh
Ingredients:
500g semi-hard butter (I used Liv salted butter)
300g condensed milk
3 tsp rum (optional but makes a whole lot of difference)
150g plain flour
1 tsp gingerbread spice
20 egg yolks
200g castor sugar

10 egg whites
50g castor sugar
1/4 tsp cream of tar tar

Breakfast Cups


These Breakfast Cups are just so awesome to eat just because it's got eggs that's semi-cooked the way I love it! I also have these for tea as they're just so good. This is one of my personal favourites for a quick meal fix! They take merely 30 mins or less to prepare and cook and tastes just too good to be true.


Breakfast Cups Recipe
This recipe yields 2 breakfast cups
Ingredients:

2 eggs
2 slices of bread
5 mini cheese sausage

Some butter to butter the ramekins
Some salt
Some black pepper


**UPDATED 31 July 2012**

You can use silicon baking cups for these Breakfast Cups too! They are easier to clean up as compared to Ramekins though they are less pretty! (:

3-way Steamed Eggs using Kitchen Art Pot


I tried this 3-way Steamed Eggs inspired by Yukie from Munch Ministry's facebook group.
This is so simple to prepare but yet tasty! This took merely 20 mins to prepare and cook.


3-way Steamed Eggs Recipe
This recipe yields 4 small cups of steamed egg
Ingredients:

3 chicken eggs
1 salted egg
2 century eggs

50ml water
1 tsp soy sauce
Some white pepper

Happy Call Pan Preserved Radish Egg

I LOVE eggs, especially preserved radish egg, or what we'd call Cai Por Nerng. This is one of those dish I can eat alone with plain rice and be contented! Using the Happy Call Pan, I created this Happy Call Pan Preserved Radish Egg. It took 15 minutes to prepare and cook this dish and it yields an omelet the size of a Deeper Happy Call Pan.

Ingredients:

5 eggs
3/4 packet of preserved radish

Rainbow Cupcakes!

I just had my 3 consecutive days of examination and my hands itched to bake so much!
This is my 2nd trial with rainbow cakes/cupcakes.
I bought my WILTON gel colours when I went to JB so I baked some Rainbow Cupcakes with them today! This entire project took about an hour and yields 9 cupcakes.
Recipe adapted from Cupcake Creations.


Rainbow Cupcakes
Ingredients:

175g self-raising flour, sifted
150g castor sugar (or super fine sugar)
150g butter, softened (I used salted)
1 tsp vanilla paste (Mine's from PH)
3 eggs
WILTON gel colours 
(I used violet, blue, green, yellow, orange and red)

200g icing sugar, sifted
2 tbsp hot water
Cupcake decorations: Chocolate chips, 100s and 1000s, sparkly sand
9 cupcake cups

Sticky Chewy Chocolatey Brownies


I was feeling really random and stressed out so I decided to bake some brownies.
These were supposed to be Happy Call Pan brownies but they didn't turn out well after 20 mins..
The bottom was burnt and the top all liquidish, most probably because my small fire wasn't small enough..

Nevertheless, I poured the remaining batter into the greased pan to prevent wastage.
Presenting my Sticky Chewy Chocolatey Brownies!
Delightful snack that's 'oh-so-chewy'! 
It took me about 30 minutes to prepare and another 40 minutes to bake.
This was adapted from Brooke's Best Bombshell Brownie


Sticky Chewy Chocolatey Brownies Recipe
Ingredients:

1 cup of melted butter (230g or so)
3 cups white sugar (603g or so)
1 tablespoon vanilla paste [This is richer than Vanilla extract]
4 eggs
163g cake flour
1 cup unsweetened cocoa powder (130g or so) [mine's from PH]
1 teaspoon salt
1 cup dark chocolate chunks
[I used dark couverture chocolate chips from PH but any type of chocolate chips will do too!]

Some margarine for greasing the pan
2 tbsp of icing sugar

7 inch round pan 
(There will be excess batter so maybe a 9 inch round pan will more suitable)

Happy Call Pan Fish Paste Egg Roll


This was my first trial of Happy Call Pan Fish Paste Egg Roll after being inspired by Wokkingmum Elaine.
This was moist, relatively easy to cook and tasty! (:
Recipe adapted from Wokkingmum Elaine as I tweaked the recipe.
This dish is also relatively cheap to prepare: $4 or under and it took me 30 minutes in all.


Happy Call Pan Fish Paste Egg Roll Recipe
Ingredients: 
3 eggs
1 pack fish paste (200g)
1/2 green bell pepper
4 imitation crabsticks
A pinch of salt
