Mango Tofu Cheesecake Cups


Happy Sunday! This is the first bake of the year and it was fun! I woke up early this morning to cook for the hubby before he left for work so I decided to bake after that. Last Friday, we had food catered for our meetings in the afternoon. The food was served in these lovely cups which I collected, washed ,dried and re-used. I'm sure these cups or similar ones can be found in baking shops like Phoon Huat (: This recipe is pretty 'big' cos I made about 80 mini cups of cheesecake. If it's too much for your liking, halving the recipe would be a good idea (: 

This recipe is fairly easy and I'd rate it a difficulty level 3 out of 5.. It took me about 1.5 hours in all to prep and wash everything.

Mango Passionfruit Tofu Cheesecake


Amidst the busy exam markings for SA1, it was time to celebrate dearest Xiao Ping's birthday! As busy and worn out as I was, how could I give up baking something for this dear friend of mine? 

I had intended to bake a cheesecake since last week but was lacking in motivation.. Decided to do the passionfruit cheesecake for her... but she mentioned something bout "I don't mind mango or chocolate!"

So I decided to fuse the 2 fruits together. I am pretty glad that the birthday girl loved the cake.. and so did my colleagues! (: And this time round, I'm returning to my roots. I'm back with a step-by-step photograph tutorial. How do you like it? (:


Here's some of the ingredients I used...

This cake will take about 1.5 hours in all to 'bake' and I'll rate it a 3 of out 5 for difficulty.

Orange Tofu Cheesecake + SunMoon giveaway!


Tofu. Cheesecake. The second type of no-bake cheesecakes I'm exploring. Having shared this with many colleagues, both the yoghurt type cheesecake and this tofu cheesecakes have their league of fans. Many love this for it's lighter in taste and of course, it's lighter in terms of calories consumed!

I'm delighted to have the chance to try the SunMoon fruit cups and it was pretty amazing to me how the fruits are kept fresh in apple juice rather than the usual sugar syrups that come with canned fruits. I then toyed with the idea of fresh fruits inside the cake as opposed to always having it on the outside.. And the Orange Tofu Cheesecake was birthed. 

It was such a hit at the office. It's also my joy and pleasure to be able to feed people and see the delight on their faces when they enjoy what I've prepared. 

This recipe is relatively simple at 3 out of 5 stars in terms of difficulty and it takes about 1 hour 30 minutes to complete. Also, there's a giveaway for SunMoon products in this blog post!

Green Tea Pistachio Tofu Cheesecake


I have been away... and I'm thrilled to bring you this Green Tea Pistachio Tofu Cheesecake this weekend! It's something different from the usual yoghurt cheesecakes I've baked. This was adapted from one of my favourite bloggers Shiberty. It takes merely 1.5 hours in all to 'bake' this no-bake cheesecake! (:

Cynthia's Strawberry Delight Cheesecake (no-bake)


This recipe for Strawberry Delight is sure to wow your guests as the pretty insides of strawberries are used to line the sides of the cake. This recipe is also relatively simple as it is does not require baking. I'd rate it a difficult level 3 out of 5 and it takes about 2 hour 30 minutes to 'bake'.

Cynthia's Nutella Cheesecake


I'm probably a little too obsessed over cheesecakes these days. The number of cheesecakes I've been creating have been a little insane. Then again, I really love to bake! I also love to feed people around me. Hence, I had the idea to infuse Nutella into the cheesecake recipe that I've been meddling with. Little did I know it'd be such a hit with my colleagues! (:

One set-back of this cake is that the glaze is REALLY SLIPPERY. It tastes amazing but it doesn't cling on well onto the cake. I'd suggest that you follow the suggestion I've made in the video. Also, just be a little more careful when transporting the cake! (:

Anyway, the cake is relatively simple so I'd rate it a difficulty level 3 out of 5. It should take about 3 hours in all to complete.

Cynthia's Berries Cheesecake


After the success of the Strawberry Cheesecake I made earlier this week, it's been on my mind to do a more layered version. After the buzz yesterday, I decided to take a break as there's a lot on my mind.

Life and death. It's just painful how loved ones leave earlier than we wish they would. Then again, it is just something that is beyond our control. ):

Cynthia's Strawberry Cheesecake


I feel like I'm on a baking frenzy. I've been baking on Sunday, Monday and today too! (: It sure is a luxury to be able to bake. Somehow, even though I'm tired, I always find some source of mysterious strength when it comes to baking!



So despite the few hours of sleep last night, the long and frenzy day I had today preparing for the Parent Teacher Conference tomorrow night, the trip to ICA to collect my passport, the impromptu tea I enjoyed with Catherine and her hubby, the trip down to the banquet venue to choose our banquet invites and to do a survey of the venue, I still garnered energy to play in the kitchen.

It's always a blessing to bless others with food so I made a No bake Strawberry Cheesecake for my colleagues to enjoy tomorrow. After all, it's a really long day we're all gonna have tomorrow.

It's also my first ever Parent Teacher Conference! (:

In any case, I'd rate this recipe a difficult level 3 out of 5 and it takes about 3 hours all in all to prepare.

No Bake Blueberry Cheesecake


The No Bake Blueberry Cheesecake been highly requested but I've not baked/prepared any prior to this. The only drawback and of course, the biggest drawback here is that I'm lactose intolerant and cream cheese will send me running for the loo when consumed. However, the fav boy is such a fan of cheese and since my hands were itching to bake and that Philadelphia was on promotion in NTUC, I decided to try this out. 

NTUC is having a promotion for these cream cheese blocks. I believe that I paid $9.95 for both blocks and an adorable hand whisk and measuring spoon was thrown in as a freebie! What a deal, isn't it? So being itchy-handded, I started prepping this last night as I wanted to be sure that the cheesecake layer sets right.

So if you've guessed it right last night via the Facebook posts I posted, you're smart XD

These No Bake Blueberry Cheesecake are really simple to make but they require time to set. I made them in 3 variety of flavours: Original, Blueberry and Strawberry. I also made them in 3 variety of sizes. Shooters, Jars and Cups (:

These are the mini shooters which are just so adorable!
