Blueberry Red Velvet Cupcakes


A twist to the regular Red Velvet Cupcakes, here are some Blueberry Red Velvets that I did in the form of a cupcake bouquet for my MIL-to-be for Mother's Day. A pretty twist to the regular classic that's fun to present to any one that you love. 


This recipe will take you about 1h 15 minutes to 1 h 30 minutes to prepare and I'm rating it a 2 out of 5 for difficulty level. If you're doing it into a bouquet like the one I have in this picture, it should take you about 1 hour 30 minutes with a difficulty level of 4 out of 5.

Red Velvet Cupcakes



Red Velvet Cupcakes. Where should I begin? This cupcake has been so highly requested by many. So here's a tutorial for a really simple Red Velvet Cupcake that doesn't require much effort. You don't even need an electronic mixer for this! This recipe is totally manageable without it. A sturdy spatula is all you need. I adapted this recipe from one that Karen Yee shared.  

This recipe will take you about 1h 15 minutes to 1 h 30 minutes to prepare and I'm rating it a 2 out of 5 for difficulty level.

Vanilla with Chocolate Chip Cupcakes

These Vanilla with Chocolate Chip Muffins were made specially for Ana's mummy (: Am really thankful that she opens her house up for us to have our cell group meeting ever Friday night and especially since she's asked for some simple cupcakes to satisfy her craving, I baked her some (:

These Vanilla with Chocolate Chip Cupcakes are almost effortless as they're the basic of all basics.


Vanilla with Chocolate Chip Cupcakes Recipe
This recipe yields 14 cupcakes
Ingredients: 

76g butter, unsalted
43g castor sugar
125g self raising flour
1 egg
80ml cup water
2 tsp vanilla essence
45g dark coverture chocolate buttons

Rainbow Cupcakes!

I just had my 3 consecutive days of examination and my hands itched to bake so much!
This is my 2nd trial with rainbow cakes/cupcakes.
I bought my WILTON gel colours when I went to JB so I baked some Rainbow Cupcakes with them today! This entire project took about an hour and yields 9 cupcakes.
Recipe adapted from Cupcake Creations.


Rainbow Cupcakes
Ingredients:

175g self-raising flour, sifted
150g castor sugar (or super fine sugar)
150g butter, softened (I used salted)
1 tsp vanilla paste (Mine's from PH)
3 eggs
WILTON gel colours 
(I used violet, blue, green, yellow, orange and red)

200g icing sugar, sifted
2 tbsp hot water
Cupcake decorations: Chocolate chips, 100s and 1000s, sparkly sand
9 cupcake cups
