Bread Pudding



This was my first attempt at baking a Bread Pudding. I'm lactose intolerant so this was a 'risk' as I couldn't sample this project to check if it was on track! Nevertheless, this was done up for my favourite boy who loves bread pudding but we couldn't find a good one outside that he liked.
This project takes 40 minutes to prepare and costs about $15 cos' raisins are expensive!

Bread Pudding Recipe
Ingredients
2 slices plain or wholemeal bread
1/2 cup low fat milk
1/2 egg, beaten
25g raisins or dried cranberries
2 tbsp soft brown sugar

Butter/Oil for greasing pan



Steps:

Cube the bread. I cut 16 cubes from a slice of bread. 4 by 4. 

Slowly stir beaten egg into low fat milk and whisk gently to combine. Add one tablespoon soft brown sugar and stir till dissolved.

Combine milk and egg mixture and bread cubes in a large mixing bowl and leave to soak until bread has soaked up the mixture completely.

Spoon bread mixture into greased tin pans. Sprinkle some raisins as you spoon them in. 
Do pour in the remaining milk mixture into the tin pans cos' it'll give it good moisture.
Sprinkle with a lil' brown sugar.

Preheat oven at 150 degree Celsius.
Bake for 3-5 minutes at 150 degree Celsius.
Increase temperature to 180 degree Celsius and bake for a total of 10-15 minutes or till' brown. 


According to the favourite boy, this is one of the best bread pudding he's ever tasted. Parts of it were crunchy while parts of it were moist. It was sweet enough for his liking too. This guy's got a sweet tooth man! In any case, this is a really simple project to bake. Great for a snack or even breakfast if time permits!
