Eggless Tiramisu


This is a simple yet great-tasting recipe for an Eggless TiramisuIt omits the raw eggs but uses mascarpone cheese. Pretty smart move I must say! Having made this many times, I feel that canned Nescafe coffee works better than home-made coffee (: The recipe calls for Baileys but feel free to replace it with any liquor of your choice! (:

The EGGLESS in this recipe refers to the omission of raw eggs unlike what most recipes call for. If you're looking at a totally egg free version for someone who's allergic to eggs or a vegetarian, may I suggest baking your own ladies' fingers. I have yet to try baking them so I shan't recommend any recipes. But do a quick google search, you'd be able to find a couple of them like I did! Alternatively, you may replace it with an eggless sponge cake. So there you go, a solution if you'd like to have a totally eggless rendition of a lovely Tiramisu!

The quantity for the Tiramisu shown in this video tutorial is the same as what you see in this image tutorial, just that it is being made in a 5.5" square cake 'ring'.

This is a hit to those many friends and family I've shared this with!

This recipe is really simple so I'm rating it a 2 out of 5 stars in terms of difficulty. It takes about 15 minutes to whip up the entire dish.

Mango Sago Pudding


I was highly tempted by this recipe for Mango Sago Pudding shared by dearest Vanessa on the Culinary Kitchenette Facebook group's blog that I co-manage with my 4 dear girls. Do feel free to join us on this Facebook group (Culinary Kitchenette) if you're into baking and cooking and would love to share the joy with us! In any case, I managed to get 5 really fragrant mangoes from NTUC at just $4.20! With that, I was itching to cook some of this since the weather was kinda annoyingly warm and humid. 

It was a really fruitful day as I had a few items baked/cooked altogether!

1) Mango Sago Pudding (Cooked, not baked) 
These were some of the Mango Sago Pudding I had in ramekins!



4) A whole load of Puteri Ayus

It was the very day I had my first of two examination papers completed and I need a rest. And what better way can I rest than to bake?  (:

This Mango Sago Pudding didn't appeal to the fav boy as he didn't like how thick it was. Guess having come from Hong Kong where desserts are pretty much the hype, this didn't meet his expectations. Then again, I pretty liked it when I had it as it was bursting with flavour! So, here's the recipe for Mango Sago Pudding.. give it a try and let me know if you like it! 

This recipe is pretty manageable.. just that it requires quite a fair bit of your attention next to the stove. I'd rate it a 2 out of 5 in terms of difficulty. Also, I took about an hour to prepare everything and another hour to chill it before enjoying it.

No Bake Blueberry Cheesecake


The No Bake Blueberry Cheesecake been highly requested but I've not baked/prepared any prior to this. The only drawback and of course, the biggest drawback here is that I'm lactose intolerant and cream cheese will send me running for the loo when consumed. However, the fav boy is such a fan of cheese and since my hands were itching to bake and that Philadelphia was on promotion in NTUC, I decided to try this out. 

NTUC is having a promotion for these cream cheese blocks. I believe that I paid $9.95 for both blocks and an adorable hand whisk and measuring spoon was thrown in as a freebie! What a deal, isn't it? So being itchy-handded, I started prepping this last night as I wanted to be sure that the cheesecake layer sets right.

So if you've guessed it right last night via the Facebook posts I posted, you're smart XD

These No Bake Blueberry Cheesecake are really simple to make but they require time to set. I made them in 3 variety of flavours: Original, Blueberry and Strawberry. I also made them in 3 variety of sizes. Shooters, Jars and Cups (:

These are the mini shooters which are just so adorable!

Mini Easy Dark Chocolate Mousse Cups


It's been a busy weekend as I attended two parties one after another after the long day we had at the bridal studio yesterday to do my bridal gown fitting! I'm totally thrilled to have selected my wedding gowns and photoshoot gowns even though the big day's only in 2014! It sure is fun planning for the wedding even though there has been many setbacks to date. Nevertheless, I know that God will provide for us in abundance! 

Anway, Yang's throwing a New Year/House-warming party later in the afternoon and I had no idea what I wanted to cook/bake/bring to her potluck party till' 2am last night (or technically this morning) before I fell asleep after the really long day! So I woke up this morning and googled to find this really easy recipe for Mini Easy Dark Chocolate Mousse Cups that I could use with the little ingredients I had at home. 

This recipe is adapted from Michael Chiarello's recipe on Food Network


This recipe is just so easy to do and I whipped it up easily in 15 minutes! Great for parties and it barely needs any chilling or anything of that sort while waiting for it to set! Just the perfect recipe for someone lazy and in a rush for time like me! So, enjoy this really simple and easy recipe!

Mango Mousse Cups


These Mango Mousse Cups are just awesome. They were made from extra ingredients from my Cubed Mango Mousse Cake. Hence, I made these Mango Mousse Cups. Dainty, refreshing, cheery.. what's there not to love? For these mango mousse cups.. they're pretty simple to prepare but the use of a food processor or blender is required.. else the mousse will not be a mousse. Other wise, it's pretty effortless and not to mention tasty as a snack, especially for summer! (: 

For mangoes, I like using Indian mangoes. They're usually sweet as compare to Thai Honey mangoes which may even be sour instead of being sweet. I like buying Indian mangoes that are slightly green with a tinge of yellow the day before I use them. That way, they are firm enough when eaten without being too soft unlike those yellow mangoes which are way too ripe! (: 




Mango Mousse Cups Recipe
Ingredients:
The recipe yields 6 mini jars

1 Indian mango
80g whipped cream
70 - 80g fresh mango puree (About 1/2 Indian mango)
4g gelatin powder (If using Bake King which is weaker, use 12g instead)
1 tbsp water

Fresh Mango Konnyaku Jellies

Wasn't in too good of a mood and I really wanted to lay my hands on something in the kitchen.
Wanted to make fruit tarts but my milk expired 3 days ago! ):
So I used the mango that I had intended to use for the fruit tarts for Konnyaku Jellies.
Simple to make, less than 30 minutes!

Fresh Mango Konnyaku Jellies Recipe
Ingredients:
A pack of Konnyaku Jelly Powder
210g of Castor sugar
2 fresh mangoes
