Sometimes, we all just need something that is so sinfully rich that it blows us away. This is one of those glorious tarts that's mind-blowing.
It is pretty mind-blowing too that such a pretty tart can be almost effortless to prepare. This tart takes merely 1h 30 minutes to put together and you have lots of free time in between to do your stuff! (: I'd rate this simple tart a difficulty level 2 out of 3.
Cynthia's Chocolate Raspberry Tart Recipe
This recipe yields a 7" tart
200g oreo cookies (minus the cream)
80g unsalted butter, melted
175g dark couverture chocolate
70g whipping cream
4 tbsp unsalted butter
1 punnet of raspberries
This is the type of Oreo cookies I used for the no-bake base.
Have the cookies in a bag.
Crush it till it is crumbly and fine.
Melt the butter over a double boiler or in a microwave oven on medium heat for 2 minutes.
Pour the melted butter into the bag. Mix well.
Press the cookie mixture into your tart tin using the back of a large spoon or ladle. Do create a 'wall' along the sides of the tin. Pop it into the freezer to set for 30 minutes.
In a microwavable bowl, melt the chocolate on medium heat in the microwave oven till it is glossy. You may also do this over a double boiler.
One the chocolate is melted, add the whipping cream. Pop the bowl back into the microwave oven and warm it up on medium heat for 2 minutes.
Pop the butter into the mixture and mix well till a shiny and smooth mixture is derived.
Pour mixture into tart pan. Chill for 30 minutes before decorating with raspberries.
To cut the tart cleanly, warm up a knife and wipe it dry before cutting the tart. Wipe it clean and dry again before making another cut.
