I just had my 3 consecutive days of examination and my hands itched to bake so much!
This is my 2nd trial with rainbow cakes/cupcakes.
I bought my WILTON gel colours when I went to JB so I baked some Rainbow Cupcakes with them today! This entire project took about an hour and yields 9 cupcakes.
Recipe adapted from Cupcake Creations.
175g self-raising flour, sifted
150g castor sugar (or super fine sugar)
150g butter, softened (I used salted)
1 tsp vanilla paste (Mine's from PH)
WILTON gel colours
(I used violet, blue, green, yellow, orange and red)
200g icing sugar, sifted
2 tbsp hot water
Cupcake decorations: Chocolate chips, 100s and 1000s, sparkly sand
9 cupcake cups
Self-raising flour sifted.
Add the sugar in.
My butter wasn't softened as it was an impromptu baking session.
So, I cubed the butter with the back of my butter knife to allow it to soften faster.
Whisk them first.
Add the butter, sugar and flour in.
Mix well using an electric whisk for 1/2 a minute.
Add the vanilla paste.
Mix more for another 2 - 3 minutes till it's light and fluffy.
Separate the batter into 6 bowls.
Add 1/6 tsp of gel colouring into each bowl and mix well.
Heat up the oven to 200 degree Celsius.
Scoop about 1 tsp of purple batter into the cupcake cup.
Knock the cupcake cup with the batter against your palm to allow the batter to sink into a flat layer.
Bake the cupcake for 1 minute and remove from oven.
The purple layer should be slightly cooked.
Add a teaspoon of blue batter into the middle of the cup and pop it back into the oven for another minute.
Remove from oven and repeat steps for the green, yellow, orange and red batter.
Your cup should be 3/4 filled when it's filled with 6 colours.
Lower the oven's temperature to 180 degree Celsius and bake for another 20 minutes or till a toothpick comes out clean when poked into the middle of the cupcake.

Set cupcakes in front of fan to cool.
My frosting was just a simple partial glaze to allow my cupcake decorations to stick.
Sieve the icing sugar and add 2 tbsp of hot water to it. Mix well.
If mixture is too thick, add a lil' more hot water.
If mixture is too thin, add a lil' more icing sugar.
Use the glaze as 'glue' to stick the decorations on it!
The final product! LOVE how pretty the colours are!
The cupcakes were moist and sweet. However, my mum didn't wanna try it cos it was too colourful and didn't seem appetising to her! The fav boy thought it was okay.. Maybe next time round, I'll try 2 tsp of vanilla bean paste to make it tastier! (:
But I really love the colours, it's like my HAPPY PILL! (:
