Easy Chocolate Bundt

Like a sun, this cake brightens up one's day! It's an Easy Chocolate Bundt that uses only a pan/pot and a mixing bowl.. It was pretty easy to put together and a delight to have! The recipe takes about 1.5 hours in all and I'd rate it a difficulty level 2 of 5.

Banana Sponge Cake

I LOVE BANANA CAKES. Especially chilled ones. 

As I was baking a chocolate sponge cake on Saturday and it really seemed wasteful to have my huge oven bake ONLY one small 6" cake, I whipped up another 2 6" banana cakes. I referred to Wen's Delight's version of the Banana Sponge Cake.. It's a recipe adapted from Richard Goh. A man I admire so much! (: It's fragrant. It's fluffy. It's good.

This recipe takes about 1.5 hours to put together and I'd rate it a difficulty level 3 out of 5. 

Banana Sponge Cake
This recipe yields two 6 inch cakes

6 eggs (55g, room temperature)
240g castor sugar
4 bananas (about 300 - 350g)
300g cake flour
1 tsp baking powder
1/2 tsp baking soda
1 tbsp vanilla bean paste
180g oil (Canola/Sunflower)

Method
1. Pre-heat oven to 160 degree Celsius. 
2. Sift dry ingredients and set asie.
3. Add sugar and banana to eggs and whisk till light in colour/near to stiff peaks. The batter should double - triple in volume. You'd be able to see 'tracks' in the batter when it's almost ready.
4. Add dry ingredients and oil to egg batter and fold thoroughly. I LOVE to use my hands for folding. Check out this video tutorial I did for a better idea of how it can be done. 
5. Pour batter into baking tin that has been lined and greased. 
6. Gently tap baking tin against kitchen counter to release bubbles.
7. Bake for 40 - 50 minutes or till cooked. A toothpick/cake tester poked into the cake should come out clean.
8. Allow cake to cool completely. Enjoy! I like mine chilled.
(Store it in an air-tight container)

Cheesy Baked Rice (Campbell sauce)

My mil (ma) came over yesterday morning.. I invited her to stay for lunch (: 

I baked a Cheesy Baked Rice as inspired by Mrs Minty Cream. She has an easy way of baking a baked rice with Campbell's cream sauce! (: I love the rice when it was piping hot and oozing with cheese.. I also had fun playing with my new individual portioned baking dish.. 

This recipe took about 1.5 hours in all to prepare and I'd rate it a difficulty level 3 out of 5.

Matcha Macarons (with Video Tutorial)


If you have noticed, macarons are my latest obsession. I'm pretty sure that stemmed from my sweet success about 2 weeks ago. Earlier this week, I tried making some matcha and chocolate macarons but I made a boo boo and the shells weren't as pretty as I wish they would be. 

Since it was a PH yesterday and that I was gonna meet my mum and siblings for dinner, I decided to bake some macarons for them as they've yet to have any of those I've baked. Also, it also helped that my new tripod arrived on Thursday >.< I did try filming a video tutorial prior to this in my -still quite new- kitchen but truth be told, the angles were HORRIBLE. I decided to invest in a tripod and I'm proud to say that I'm back to doing video tutorials! (: 

So back to the macarons.. as you may already know, they're not the easiest of things to bake but they're such gems. The hubby loves them a lot so it's like a legit reason for me to bake more of them though I don't give him a lot of it to eat. He only gets a few from each batch XD

These Matcha Macarons took me about 1.5 hours to bake and I'd rate it a difficulty level 4 out of 5. There are many factors that may lead to its failure so I'll share how each failure maybe avoided based on the experience I've had.

Strawberry Tofu Hearts

Valentine's Day is approaching and it's always a lovely time to do something special for your loved ones though I do truly believe that one should do it all year round! Here's a lighter less guilty of the Strawberry Jelly Heart, tofu version. This recipe doesn't require an oven so it's convenient for those who do not have one! (: 

I used mini cups I re-used from a local caterer. I found similar styled cups though slightly larger in taobao (yay!!!). I'm sure the hubby would love these cups better cos he complained that the mini ones had too little cheesecake and was tough to dig into! The larger ones would be perfect.. I can't wait to bake something new in them! XD However, it was a pity that they arrived a day later than I wished. Nevertheless, if you're using mini cups, you'll get about 28 - 30 cups and about 15 - 18 larger cups using these taobao cups. 

The larger cups I got from taobao looks like this! It even has lids! (: 

These beauties are relatively easy to bake so I'd rate them a difficulty level 3 out of 5. They'll take a total of 1.5 - 2 hours to bake.

Mango Tofu Cheesecake Cups


Happy Sunday! This is the first bake of the year and it was fun! I woke up early this morning to cook for the hubby before he left for work so I decided to bake after that. Last Friday, we had food catered for our meetings in the afternoon. The food was served in these lovely cups which I collected, washed ,dried and re-used. I'm sure these cups or similar ones can be found in baking shops like Phoon Huat (: This recipe is pretty 'big' cos I made about 80 mini cups of cheesecake. If it's too much for your liking, halving the recipe would be a good idea (: 

This recipe is fairly easy and I'd rate it a difficulty level 3 out of 5.. It took me about 1.5 hours in all to prep and wash everything.

HK Style Century Egg Congee


This Century Egg Congee is one my mil would always cook for the family. It's one of my hubby's absolute favourite food. Since we moved out, we haven't had much chances to eat it. So I decided to learn how to cook this porridge the both of us love so dearly. 

This was taught by my mil and truly, I've learned so much from her (: 


For this congee, I used a Tanyu. It's not a must according to my mil but it does make the congee taste better and smoother. She says that a regular pot would do too.. but I've yet to try and if the great taste can come from a Tanyu, I'll stick to it (: 

This recipe requires frequent stirring so I'd rate it a 4 out of 5. It takes about 1.5 hours in all to cook this.

Famous Amos alike Chocolate Chip Cookies


I've been so unmotivated of late. It's been my vacation but all I've been doing is resting. I guess I've been too tired during school term. Being free this afternoon and having already washed my kitchen twice this morning, I was determined to bake something. 

I chanced upon this Famous Amos alike recipe online when doing my research and I decided to give it a try! This recipe is tasty but if I were to bake it again, I'm bound to add in my favourite stuff like butterscotch chips and pecans! Despite being teaspoon sized, these cookies were larger than their famous cousin as the baking soda did probably help them spread a little. Now, I need to hunt for butterscotch chips! 



This recipe is fairly simple so I'd rate it a difficulty level 2 out of 5! It took me about 1.5 hours to bake 100 cookies.

Mango Passionfruit Tofu Cheesecake


Amidst the busy exam markings for SA1, it was time to celebrate dearest Xiao Ping's birthday! As busy and worn out as I was, how could I give up baking something for this dear friend of mine? 

I had intended to bake a cheesecake since last week but was lacking in motivation.. Decided to do the passionfruit cheesecake for her... but she mentioned something bout "I don't mind mango or chocolate!"

So I decided to fuse the 2 fruits together. I am pretty glad that the birthday girl loved the cake.. and so did my colleagues! (: And this time round, I'm returning to my roots. I'm back with a step-by-step photograph tutorial. How do you like it? (:

Green Tea Pistachio Tofu Cheesecake


I have been away... and I'm thrilled to bring you this Green Tea Pistachio Tofu Cheesecake this weekend! It's something different from the usual yoghurt cheesecakes I've baked. Red Velvet Pushpops


I've always been very fascinated by these pushpops I've seen in many websites online and I've been dying to try them out for myself. Since I was baking some Red Velvet Cupcakes and had some of these containers, I decided to give it a try. These pushpop containers remind me of these push up ice creams I used to have as a kid! 


Indeed, these ice creams were awesome even though they were messy. I doubt they're being sold anymore now though. Maybe I should do a ice-cream pushpop tutorial too! In any case, this tutorial will show you how to assemble the awesomest Red Velvet Pushpops.

This recipe will take about 1.5 to 2 hours in all to bake and assemble and I rate it a 3/5 for difficulty level. (:

Marble Cake


This is attempt two of Marble Cake.
The first time round, there was too much chocolate, this time round, it's much better.
And of course, I used my favourite brand of butter this time round.
This takes about 30 minutes to prepare and 1 hour to bake. 
This costs about $15 to bake.

Marble Cake Recipe (7 inch)
Ingredients:
3 eggs
195g salted butter (SCS socks!)
195g self-raising flour
120g castor sugar
190ml milk
1 tsp vanilla essence
2 1/2 tbsp cocoa powder

Bah Kwa Cookies


What's Chinese New Year without Barbecued Pork aka Bah Kwa? The fragrant and savoury slice of meat is one of my family favourite and it sure is interesting how we can include something so sweet and yet savoury into cookies. 

I was baking more of the Pineapple Roses for Chinese New Year yesterday and I had some dough left. So with Gwen's inspiration, I baked some Bah Kwa Cookies that melt-in-the-mouth using the same melt-in-the-mouth dough used for the Pineapple Roses. 

Using a higher temperature, these cookies browned faster than that of the pineapple roses which were pale. These cookies are crunchy on the surface but melts in the mouth. The bah kwa gives a really good salty/savoury chewy texture. Also, being tiny in size, these cookies are really easy to pop and savour in one mouth. Try these cookies today! 


Bah Kwa Cookies Recipe
This recipe yields about 100+ pieces of  5cm round cookies

250g unsalted butter (room temperature)
50g icing sugar
2 egg yolks (I used 55g eggs)
360g plain flour
2 tbsp corn flour
1/4 tsp salt

400-600g bah kwa, depending on preference

Nutella Tart


This Nutella Tart is just THEBOMB. This is best eaten chilled and I can't understand why I didn't bake it any earlier. This is pretty simple to bake and can be the tart can be baked in advance.. Alternatively, if you're lazy enough, buy a store-bought shortcrust pastry (: This recipe yields 2 5" Nutella Tarts. The reason why I made such a 'huge' quantity is that 1 portion of shortcrust pastry maybe too tough to work with as it is very small in quantity. You may want to halve the recipe and just bake one tart.. but since it's gonna be so good, why not 2? (:


Nutella Tart Recipe
This recipe yields 2 5" tarts
Ingredients:
125g cake flour
1 egg
38g icing sugar
63g salted butter (room temp)

240g nutella
1000g whipping cream for nutella cream
25g whipping cream for topping

Stuffed Chicken Aubergine (Eggplant/Brinjal)


I played around with this Stuffed Chicken Aubergine (Eggplant/Brinjal) having been inspired by one of the cookbooks that I've seen. This is relatively simple to prepare and nice for someone who loves aubergines! (: This dish took an hour to marinate, 15 mins to prepare and 15 mins to cook. 


Stuffed Chicken Aubergine (Eggplant/Brinjal) Recipe
Ingredients:


2 aubergines (I used short ones)
150g minced chicken

1 tsp corn flour
8 dashes of oregano (powdered)
Some black pepper
Some salt

10ml water + 2 tsp corn flour
50ml water
1 tbsp oyster sauce

Happy Call Pan Cheesy Chicken Wrap

This dish is the fav boy's recipe that he whipped up from watching Gordon Ramsay's video.
We cooked this for 21 people last Friday! 
He modified the original recipe and so, I'm here to share his recipe (:
This dish is relatively simple to prepare and it's yummy.. it's also pretty filling!
This recipe takes 1.5 hours and it yields 16 wraps.


Happy Call Pan Cheesy Chicken Wrap Recipe
Ingredients: 

2 kg of Chicken Thigh (I used frozen chicken thighs)
Oregano (Mine's from McCormick)
Black Pepper
Salt
300g Plain Flour
4 Eggs
300g Mixed Grated Cheese 
2 Tomatoes
1/2 Romaine Lettuce (8 leaves)
1 pack MISSON wraps, Original (8pcs)

Cooking Oil
Toothpicks

Sticky Chewy Chocolatey Brownies


I was feeling really random and stressed out so I decided to bake some brownies.
These were supposed to be Happy Call Pan brownies but they didn't turn out well after 20 mins..
The bottom was burnt and the top all liquidish, most probably because my small fire wasn't small enough..

Nevertheless, I poured the remaining batter into the greased pan to prevent wastage.

Delightful snack that's 'oh-so-chewy'! 
It took me about 30 minutes to prepare and another 40 minutes to bake.
This was adapted from Brooke's Best Bombshell Brownie


Sticky Chewy Chocolatey Brownies Recipe
Ingredients:

1 cup of melted butter (230g or so)
3 cups white sugar (603g or so)
1 tablespoon vanilla paste [This is richer than Vanilla extract]
4 eggs
163g cake flour
1 cup unsweetened cocoa powder (130g or so) [mine's from PH]
1 teaspoon salt
1 cup dark chocolate chunks
[I used dark couverture chocolate chips from PH but any type of chocolate chips will do too!]

Some margarine for greasing the pan
2 tbsp of icing sugar

7 inch round pan 
(There will be excess batter so maybe a 9 inch round pan will more suitable)
