Happy Call Pan and Oven Apple Strudel


I've always loved a good apple strudel and Ritz's is my favourite. 
However, it being in Thomson/Bugis' too far off for me to buy when I've have a craving for it.

So, inspired by one of the ladies in Munch Ministry's Baking Club, I decided to put together various components of my other recipes to bake this Happy Call Pan and Oven Apple Strudel.

I baked the puff pastry in the oven as I don't like to 'waste' gas.. 
I've not tried puff pastry using the Happy Call Pan so I'm not sure if it'll work as a full Happy Call Pan recipe. Will try it soon though so it'll be of help to those without an oven!
Nevertheless, this whole project took me about 2 hours and it costs about 20 bucks.


Happy Call Pan and Oven Apple Strudel Recipe
Ingredients: 
(This recipe yields 6 palm sized strudels)

1 pack puff pastry (I used Pampas)
1 egg for egg wash

APPLE FILLING
(A)
4 Fuji Apples, cubed
520ml water
40 ml lemon juice (Optional)
180g sugar
(B)
120 ml water
4 tbsp corn flour
(C)
40 g butter
2 tsp brown sugar

CUSTARD
10 tbsp corn flour
5 egg yolks
12 1/3 tbsp sugar
500ml milk

Optional: Icing Sugar




Steps:

Ingredients for apple filling!

Remove skin on apples and cube the apples.

Boil ingredients in (A) for 10 minutes or till' apples are soft.

Mix ingredients in (B) together and add (B) to the mixture.
Stir well and allow mixture to thicken.

Turn off the fire when mixture has thickened and add (C).

Mix well.

Set mixture aside and allow it to 'rest'.
Drain the apple filling before use. 
Else it'll be too wet for the puff pastry.

Ingredients for custard.

Separate the egg yolks from the whites.
I like to do mine manually cos' I don't like egg separators as they don't work well. (:
Set ingredients aside.

Mix corn flour and egg yolks together.

Add in the sugar and mix.

Mix well.

Warm the milk on low fire. 
DO NOT allow it to boil.

Add mixture in and mix. 
This part is tricky as the mixture's in bits and pieces so try and 'break down' what ever you can.

Stir and stir till mixture thickens.
This should take about 5 minutes. 
I LOVE how the Happy Call Pan is non-stick so the mixture cooks real well in it!

When mixture thickens, set aside and allow to cool. 
Cover the bowl with cling wrap to prevent custard from drying up.

The PAMPAS pastry! 
A lil' saltish.. will try other brands in future too but for now, this is good!

Remove blue plastic sheet between puff pastry sheet.

Slice into 6 pieces.
Pop the puff pastry back into the freezer when it's not in use else it'll 'melt'.
I just popped my entire cutting board into the freezer (:
Apply egg wash on the surface of the puff pastry.

Bake at 180 degrees Celsius for 8 - 10 minutes or till puff pastry turns golden brown.

Allow to cool for several minutes and apply a dollop of custard on it.
If the puff pastry is a lil' tall, flatten it a lil'!

Add a dollop of apple filling!

Place another slice of puff pastry on top of it!

Repeat steps of adding custard and apple filling.

Top with another slice of apple strudel!
Dust with some icing sugar if you like.
I forgot to do so! (:

The Happy Call Pan & Oven Apple Strudel is then complete and ready to be served!
Try to do the assembly only before eating.. else the puff pastry will turn soft.
