This is a more detailed version of the recipe I've posted previously for the Happy Call Pan Banana Leaf Sambal Sotong. I simply love using banana leaf for creating this dish as it makes the sotong more fragrant! This dish is simple to prepare and it takes only 15 minutes to cook and prepare. If you like it to be more fragrant, you can marinate it a couple of hours beforehand.
Happy Call Pan Banana Leaf Sambal Sotong Recipe
2 tbsp of sambal
The sambal and the sotong.
To clean the sotong, pull the remove the head, the innards and the transparent 'bone' inside the sotong. Rinse thoroughly.
Slice the sotong.
Marinate with 1 tbsp of sambal. I left my sotong in the fridge for 3 hours before cooking it. You can choose to do so before hand or just marinate and cook. Both ways are fine. (:
Cut a piece of banana leaf the size of the Happy Call Pan. Wash the banana leaf. It will shrink when cooked.
Heat up the pan with medium-high heat. Place the banana leaf and sotong into the pan as shown.
Scoop another table spoon of sambal onto the mixture.
Close the lid and cook for about 8 - 10 minutes or till sotong is completely cooked.
I LOVE how fuss free this dish is and how the sambal is just 'oh-so-good'.
