Baby Friendly Rice Cooker Chicken Rice

This rice cooker chicken rice was highly recommended by Angie. I tried it and we loved it. I cooked a soup to go with it as well as long bean eggs.

Adriel loves soup and he is seen using the B.Box cup here. It has a straw that is stuck to the side of the cup and handles for the cup for independent drinking of soup (: 

Anyway, this recipe is easy, takes about 15 minutes to prepare given that the rice cooker does the rest of the work. I'd rate it a difficulty level 2 out of 5. 

Baby Friendly Rice Cooker Chicken Rice
This recipe serves 2 - 3 pax

1 cup rice
1 bulb garlic
2 - 3 chicken legs
sesame oil
2 pandan leaves, knotted
stock (3 cups for the low GI rice I used, 1.5 cups or a little lesser for Jasmine rice)

1. Washed rice thrice. 
2. Smash 1 bulb of garlic (8 to 10 pcs) and remove skin and base
3. Added stock and pandan leaves. 
4. Added a drizzle of sesame oil.
5. Cook as per white rice function.
6. Serve and enjoy!

Baby Friendly Pumpkin Sauce Pasta

I found an easy way to make pasta sauce 🤣 
Steam some cubed pumpkin/butternut squash for 7 to 10 mins. Mash. Stir in cooked pasta. Sprinkle some dried herbs like parsley and you're good to go! It tasted naturally sweet and Adriel loved it!


Baby Friendly 1 Pot Tomato Rice

This is a really simple 1 pot/rice cooker rice and it tasted really good! I'd rate it a difficulty level 2 out of 5. It takes about 15 minutes to prepare and let the rice cooker do the works. Adriel loves this and so do I even though I'm on a low carb diet XD 

Baby Friendly 1 Pot Tomato Rice

1.5 cups rice 
1/2 broccoli, diced
1 carrot, diced
1/3 pack shinmeiji mushrooms, diced
4 cloves of garlic
2 cups water mixed with chicken stock (I used 1.5 cups stock and 0.5 cups water, use all chicken stock if stock is home cooked)
200g beef slices
1 chicken leg
1 tomato, marked with a X the top

Put all into rice cooker and cook as per white rice function! Yummy! 😍

Sweet Potato Mash (baby friendly)


A recipe so simple yet delicious. It takes only 2 ingredients and 15 mins (:

Sweet Potato Mash (baby friendly) Recipe
2 sweet potatoes
1 tbsp unsalted butter

Method
Boil or steam sweet potato till tender. 

Mash sweet potato with a fork or use a ricer. 

Add butter and mix well.

Serve as a lump or pipe using a piping bag and tip. I used Wilton 1M.

2 ingredient ice cream without machine

Never have I ever imagined that I could get great tasting home-made ice cream without the use of an ice-cream machine. I was about to sleep last night and I chanced upon this recipe by Gemma of Bigger Bolder Baking. Goodness, I pranced out of bed and went ahead to make this! 

This is simple and takes merely 15 minutes to put together. I'd rate it a difficulty level 2 out of 5. 

I made 2 different flavours with this base and there's definitely so many more flavours I want to explore!

Tropical Pops



The weather has been insane of late, raining one day and sunny the other. Prompted by my sister, we decided to make these Tropical Pops for a hot day. We were lucky as we made them last night and it was insanely hot this afternoon.. these came in real handy! 

There's really good to eat, not just ice but frozen fruits. Delectable! (: They're really easy to make and you can even make them with your little ones! Lesser sweet ice-creams and more fresh fruits! These took me about 15 minutes to make and I'd rate them a difficulty level 2 out of 5.

Cheesy Hotdog Rolls (Baked)


The weather in Singapore has been really bad of late thanks to the slash-and-burn forest fires taking place in neighbouring Indonesia. The PSI levels have rocketed to a sky high of 400+, one of the first in Singapore history. It's moments like this where people go into frenzy and snap masks of ANY kind and air purifiers off the shelves. With some mean people even snapping up stocks and then reselling for sky high prices. 

The haze hasn't been too friendly to me as my respiratory track's sensitive. My eyes would water and I'd get dizzy from inhaling all that 'smoky air'.. I couldn't put on my contact lenses this morning and it stung my eyes to do so.. my plans to bake have also been pushed away as my kitchen is barely 'protected' from the harmful air. It's been a little better today. The PSI levels and PM 2.5 levels are lower but I know it's only temporal. Sooner or later, it'll come back soon and there's pretty much no signs of it letting down as yet as the hotspots burning in Indonesia show no signs of decrease. Doesn't help that it's one of the driest months around too. 

Nevertheless, inspired by a friend in the facebook cooking & baking group I'm in, I whipped up this simple snack for my sis and I. A almost guiltless treat. Baked instead of deep-fried, these Cheesy Hotdog Rolls are the perfect treat for any day when you're kinda hungry and craving for something good! 

These are so simple and almost effortless they I'd rate them a difficulty level 1 out of 5 and it takes merely 15 minutes or so to complete them!

Eggless Tiramisu


This is a simple yet great-tasting recipe for an Eggless TiramisuIt omits the raw eggs but uses mascarpone cheese. Pretty smart move I must say! Having made this many times, I feel that canned Nescafe coffee works better than home-made coffee (: The recipe calls for Baileys but feel free to replace it with any liquor of your choice! (:

The EGGLESS in this recipe refers to the omission of raw eggs unlike what most recipes call for. If you're looking at a totally egg free version for someone who's allergic to eggs or a vegetarian, may I suggest baking your own ladies' fingers. I have yet to try baking them so I shan't recommend any recipes. But do a quick google search, you'd be able to find a couple of them like I did! Alternatively, you may replace it with an eggless sponge cake. So there you go, a solution if you'd like to have a totally eggless rendition of a lovely Tiramisu!

The quantity for the Tiramisu shown in this video tutorial is the same as what you see in this image tutorial, just that it is being made in a 5.5" square cake 'ring'.

Mini Easy Dark Chocolate Mousse Cups


It's been a busy weekend as I attended two parties one after another after the long day we had at the bridal studio yesterday to do my bridal gown fitting! I'm totally thrilled to have selected my wedding gowns and photoshoot gowns even though the big day's only in 2014! It sure is fun planning for the wedding even though there has been many setbacks to date. Nevertheless, I know that God will provide for us in abundance! 

Anway, Yang's throwing a New Year/House-warming party later in the afternoon and I had no idea what I wanted to cook/bake/bring to her potluck party till' 2am last night (or technically this morning) before I fell asleep after the really long day! So I woke up this morning and googled to find this really easy recipe for Mini Easy Dark Chocolate Mousse Cups that I could use with the little ingredients I had at home. 

This recipe is adapted from Michael Chiarello's recipe on Food Network


This recipe is just so easy to do and I whipped it up easily in 15 minutes! Great for parties and it barely needs any chilling or anything of that sort while waiting for it to set! Just the perfect recipe for someone lazy and in a rush for time like me! So, enjoy this really simple and easy recipe!

Honey Lemon Detox

Honey Lemon Detox.. something that has been highly raved by many in several sites I've been participating in and well, since I love lemon so much, I decided to give it a go! With it's raved high benefits of skin whitening, detox, weight-loss, reduction of eye bags and lighting of dark eye rings and more.. what's the harm in trying? 

When I had my first glass of this, I was blown away. I really loved how good it tastes.. heck the benefits even if they don't work.. I just love HONEY LEMON! (: However, there's a few things to note about preparing this Honey Lemon Detox.. 

1) Use glass and only glass bottle to store the mixture. 

2) Do not use a metal spoon when you're scooping the honey or the mixture.
3) Remove the rind (white part) of the lemon when preparing the mixture, else, mixture may be bitter.
4) Use pure honey.. why put anything less good than what's good?
5) The mixture should be stored in the fridge for at least 3 days before consumption for 'magic' to take place.
6) Use only cold/room temperature water to mix your drink as hot/warm water will kill all the good enzymes in the honey.

This is almost effortless so give it a try!


Honey Lemon Detox Recipe
Yields about 4 glasses of Honey Lemon Detox
Ingredients:
1 fresh lemon
133g pure honey

This is the sample batch I did.. but if you like it.. do multiply the recipe by 3 or 4 times and keep it in a large glass jar.. that's what I did! (:

Happy Call Pan Banana Leaf Sambal Sotong

This is a more detailed version of the recipe I've posted previously for the Happy Call Pan Banana Leaf Sambal Sotong. I simply love using banana leaf for creating this dish as it makes the sotong more fragrant! This dish is simple to prepare and it takes only 15 minutes to cook and prepare. If you like it to be more fragrant, you can marinate it a couple of hours beforehand.

Ingredients:

3 sotong
2 tbsp of sambal


Happy Call Pan Preserved Radish Egg

I LOVE eggs, especially preserved radish egg, or what we'd call Cai Por Nerng. This is one of those dish I can eat alone with plain rice and be contented! Using the Happy Call Pan, I created this Happy Call Pan Preserved Radish Egg. It took 15 minutes to prepare and cook this dish and it yields an omelet the size of a Deeper Happy Call Pan.

Kitchen Art Pot Korean Sticky Ricecakes

I've always loved Korean Sticky Ricecakes but 3 bucks a pop's too expensive. XD
That's why I choose to cook Kitchen Art Pot Korean Sticky Ricecakes for a fraction of the price in the comfort of my home! This dish is almost effortless and it cost me merely $4.50 for two portions (though here I'm cooking 1 out of the 2 portions) and I'm free to add whatever ingredients my heart desire.. This dish takes merely 15 minutes to cook. I cooked this in my Kitchen Art Pot but a Happy Call Pan does the job equally well. I was just itching to play with my new toy. XD

I got my $4.50 combo of 2 sachets of sauce and a big bag of sliced rice cakes sufficient for 2 portions from Tampines' Century Square's Korean supermarket located on level 3/4.

Ingredients:

1/2 a bag of rice cakes
1 sachet of ricecake sauce
2 hotdogs
1/3 can of luncheon meat
2 tbsp of water

Happy Call Pan Banana Leaf Sambal Sotong

This was my first trial at the Happy Call Pan Banana Leaf Sambal Sotong.
It's a SUPER EASY dish to prepare and it takes mere minutes!
It takes 5 minutes to prepare and less than 10 minutes to cook. 

 

Happy Call Pan Banana Leaf Sambal Sotong Recipe
Ingredients:

One fresh squid/sotong
1 tbsp of Singlong Sambal Chilli
1 piece of Banana leaf
