Happy Call Pan Claypot Tofu with Roasted Pork

I'm a fan of tofu. All sorts of tofu. Okay, maybe not egg tofu. But tofu, tau kwa etc, I just love them all. So I tried recreating the Zi Char Stall style claypot tofu. This Happy Call Pan Claypot Tofu with Roasted Pork is relatively simple to prepare and is tasty! (: It took me 30 minutes to prepare and cook this dish. This recipe yields 2 small pots of claypot tofu. I used Roasted Pork from Happy Call Pan Roasted Pork.


Happy Call Pan Claypot Tofu with Roasted Pork Recipe
This recipe yields 2 small claypots of tofu
Ingredients:

2 pcs tau kwa
1 carrot
1 packet baby corn
1 green bell pepper
20 pcs of roasted pork (I cooked this fresh)

2 clove garlic
1/3 onion
1 small piece of ginger

3 tbsp oyster sauce
3 tbsp corn flour
some water
2 tbsp light soy sauce
Some oil for frying the tau kwa



Step:
The ingredients!

Slice the onion, garlic and ginger (not shown in image). 

Slice the carrots.

Slice the tau kwa. I cut each piece into 8 slices. Pat try the tau kwa. 

Heat up the Happy Call Pan on medium-high heat with some oil sufficient for shallow frying. Pat dry the tau kwa before frying it to prevent splattering. Shallow fry the tau kwa till' golden brown with the pan closed. This should take about 10 minutes per batch.

The vegetables.

After frying the tau kwa, drain dry on paper towels.

I cooked 2 portions of claypot tofu, 1 with roasted pork and 1 without. 
I will show the steps for both accordingly.

PORTION 1- no pork 
Clean up Happy Call Pan by pouring the oil into a metal container (not plastic as hot oil will melt the bowl) and clean the pan with a paper towel. Heat up the pan with medium-high heat with some oil and shallow fry the onion, garlic and ginger and fry till fragrant. 

The onions, garlic and ginger should be something like this when ready for the next step.

Add the carrots, capsicum and baby corn and stir fry for 3 - 5 minutes till vegetable is cooked. 

Add in the tau kwa and stir fry more.

Prepare a mixture of 1 1/2 tbsp corn flour with some water to thicken the sauce. 
Add 1 1/2 tbsp oyster sauce and 1 tbsp light soya sauce. Stir well!

This is 1/2 the recipe. This is the portion without the roasted pork.

Scoop and serve in a claypot.

PORTION 2 - with roasted pork 
Clean up Happy Call Pan by pouring the oil into a metal container (not plastic as hot oil will melt the bowl) and clean the pan with a paper towel. Heat up the pan with medium-high heat with some oil and shallow fry the onion, garlic and ginger and fry till fragrant.


Add in the vegetable and roasted pork. Stir fry for 3-5 minutes till vegetable's cooked. Prepare a mixture of 1 1/2 tbsp corn flour with some water to thicken the sauce. Add 1 1/2 tbsp oyster sauce and 1 tbsp light soya sauce. Stir well!

I love the version with the fragrant roasted pork.

Scoop into claypot and serve!

I love this claypot tofu as it's tasty and fragrant. I love how I can have 2 of my favourite dishes - roasted pork and tau kwa in one dish! (: Have fun with this dish!

If you'd like to just have 1 small pot of tofu, just halve the recipe. I'd recommend that you cook it with roasted pork as it makes the dish tastier! (:
