Mustard Green Chicken Rice

This image is the pork rendition of this dish. 

This Mustard Green Chicken Rice is one pot, one meal dish I've had since I was a child. Mustard greens are bitter but somehow, I just love this rice so much that I can eat bowl after bowl after bowl till' I'm too stuffed to move! The original version I know of uses pork belly but since kakak was gonna eat it too, we used chicken (: Kakak taught me how to cook this! (: 


Mustard Green Chicken Rice Recipe
This recipe yields sufficient rice for 4-5.
Ingredients:

2 cups uncooked rice
2 bunch of mustard greens
8 cloves of garlic
1/4 ginger
30g dried shrimps (hea bee)
150 - 200g sliced chicken thigh 
(marinated with 2 tsp light soya sauce and 1 tsp sesame oil)
30g dried sliced mushroom

2 tbsp soya sauce
1 tbsp oil

Optional (To drizzle on top of cooked rice)
1 tbsp soya sauce
2 tbsp sesame oil

Ramly Fish Burger Platter

This is a simple 'chapalang' meal! The Ramly Fish Burger Platter consists of the fish burger, roasted potatoes, steamed butter corn, mixed salad and baked beans! This meal took an hour to prepare and cook.. I prepared portions for 5 people. 


Ramly Fish Burger Platter Recipe
This recipe yields 5 burger platters
Ingredients:

BURGER
5 Ramly fish burger patties
3 leaves of lettuce
1 tomato
6 tbsp shredded cheese

SIDES
STEAMED BUTTER CORN
2 corn
2 tsp butter

BAKED BEANS
1 can of baked beans

MIXED SALAD
1 box of mixed salad
Salad dressing
1 tomato

ROASTED POTATOES
3/4 pack of small potatoes
1 tbsp mixed herbs
1 tbsp olive oil


Happy Call Pan Grilled Singapore Satay

This has been the craze in Munch Ministry for a while and I bought 2 packets of the premix as soon as I found it! This dish is simple to prepare and the taste is just OUT OF THIS WORLD. I used chicken thighs for this Happy Call Pan Grilled Singapore Satay and it was so tender. The gravy was also so good that kakak and I wanted to keep it for lunch the following day! This takes about 1 hour to prepare and cook but I allowed the meat to marinate for 4 hours instead of the recommended 6 hours. 


Happy Call Pan Grilled Singapore Satay Recipe
This recipe yields 14 sticks of chicken satay
Ingredients:

1 box of Prima Taste Singapore Satay Mix
4 - 5 pieces of chicken thighs
1 tbsp oil
Some peanut mix


Happy Call Pan Grilled Chicken Wrap

This recipe is the healthier version of Happy Call Pan Cheesy Chicken Wrap. This one also has a slight twist in terms of the herb used. The meat was nevertheless tender and it was simple to prepare! This took me about an hour to prepare and cook but I allowed it to marinate in the fridge for 2 hours. 


Happy Call Pan Grilled Chicken Wrap Recipe
This recipe yields 9 1/2-sized chicken wraps good to feed 6 people with some side dishes
Ingredients:

9 pcs chicken thigh (I used frozen chicken thighs)
Some salt
Bottled mixed herbs
Black pepper

5 leaves of romaine lettuce
2 tomatoes
Missions wrap (3 pcs)

Happy Call Pan Claypot Tofu with Roasted Pork

I'm a fan of tofu. All sorts of tofu. Okay, maybe not egg tofu. But tofu, tau kwa etc, I just love them all. So I tried recreating the Zi Char Stall style claypot tofu. This Happy Call Pan Claypot Tofu with Roasted Pork is relatively simple to prepare and is tasty! (: It took me 30 minutes to prepare and cook this dish. This recipe yields 2 small pots of claypot tofu. I used Roasted Pork from Happy Call Pan Roasted Pork.


Happy Call Pan Claypot Tofu with Roasted Pork Recipe
This recipe yields 2 small claypots of tofu
Ingredients:

2 pcs tau kwa
1 carrot
1 packet baby corn
1 green bell pepper
20 pcs of roasted pork (I cooked this fresh)

2 clove garlic
1/3 onion
1 small piece of ginger

3 tbsp oyster sauce
3 tbsp corn flour
some water
2 tbsp light soy sauce
Some oil for frying the tau kwa


Happy Call Pan Roasted Pork (Shio Bah)

This is a dish I just love so I'm trying ways to perfect it. (: I managed to get a big beautiful slab of meat from Sheng Shiong for $8.70 so I cooked the Happy Call Pan Roasted Pork (Shio Bah) again! This dish is relatively simple to cook with the Happy Call Pan and it took me an hour to cook and 3 hours to marinate this time round.


Happy Call Pan Roasted Pork (Shio Bah) Recipe
Ingredients:

Pork Belly (Mine was about 20cm by 12cm)
2 tbsp five spice powder
1/2 tbsp salt

1/2 tbsp for skin

Some salt for boiling pork

Kitchen Art Pot Korean Sticky Ricecakes

I've always loved Korean Sticky Ricecakes but 3 bucks a pop's too expensive. XD
That's why I choose to cook Kitchen Art Pot Korean Sticky Ricecakes for a fraction of the price in the comfort of my home! This dish is almost effortless and it cost me merely $4.50 for two portions (though here I'm cooking 1 out of the 2 portions) and I'm free to add whatever ingredients my heart desire.. This dish takes merely 15 minutes to cook. I cooked this in my Kitchen Art Pot but a Happy Call Pan does the job equally well. I was just itching to play with my new toy. XD

I got my $4.50 combo of 2 sachets of sauce and a big bag of sliced rice cakes sufficient for 2 portions from Tampines' Century Square's Korean supermarket located on level 3/4.

Ingredients:

1/2 a bag of rice cakes
1 sachet of ricecake sauce
2 hotdogs
1/3 can of luncheon meat
2 tbsp of water

Happy Call Pan Lemongrass Chicken


This Happy Call Pan Lemongrass Chicken was inspired by Wokkingmum's Lemongrass Infused Roasted Chicken but I made a fair bit of adjustments.
I love how I can play with different variations of chicken with my Happy Call Pan. (:
This dish took 15 minutes to prepare, a hour (or more) to marinate and 20 minutes to cook.


Happy Call Pan Lemongrass Chicken Recipe
Ingredients:

4 Chicken Thighs
2 tbsp Oyster Sauce
8 stalks of Lemongrass
A dash of pepper
2 tbsp of Oil
2 Calamansi

Happy Call Pan Cheesy Chicken Wrap

This dish is the fav boy's recipe that he whipped up from watching Gordon Ramsay's video.
We cooked this for 21 people last Friday! 
He modified the original recipe and so, I'm here to share his recipe (:
This dish is relatively simple to prepare and it's yummy.. it's also pretty filling!
This recipe takes 1.5 hours and it yields 16 wraps.


Happy Call Pan Cheesy Chicken Wrap Recipe
Ingredients: 

2 kg of Chicken Thigh (I used frozen chicken thighs)
Oregano (Mine's from McCormick)
Black Pepper
Salt
300g Plain Flour
4 Eggs
300g Mixed Grated Cheese 
2 Tomatoes
1/2 Romaine Lettuce (8 leaves)
1 pack MISSON wraps, Original (8pcs)

Cooking Oil
Toothpicks

Happy Call Pan Roasted Chicken & Roasted Potatoes


This is an awesome 1 dish meal.
I was so amazed at how fast the Happy Call Pan could grill this Happy Call Pan Roasted Chicken and Roasted Potato in merely 20 minutes! 
The meat was so tender and the potatoes were moist and soft!
Preparation took about 15 minutes and about an hour to marinate.


Happy Call Pan Roasted Chicken & Roasted Potato Recipe
Ingredients:

1 medium sized chicken
4 tsp of mixed herbs
1.5 tbsp of salt

1/2 a bag of mini potatoes
1.5 tbsp of olive oil
2 tsp of mixed herbs
