Stuffed Chicken Aubergine (Eggplant/Brinjal)


I played around with this Stuffed Chicken Aubergine (Eggplant/Brinjal) having been inspired by one of the cookbooks that I've seen. This is relatively simple to prepare and nice for someone who loves aubergines! (: This dish took an hour to marinate, 15 mins to prepare and 15 mins to cook. 


Stuffed Chicken Aubergine (Eggplant/Brinjal) Recipe
Ingredients:


2 aubergines (I used short ones)
150g minced chicken

1 tsp corn flour
8 dashes of oregano (powdered)
Some black pepper
Some salt

10ml water + 2 tsp corn flour
50ml water
1 tbsp oyster sauce

3-way Steamed Eggs using Kitchen Art Pot


I tried this 3-way Steamed Eggs inspired by Yukie from Munch Ministry's facebook group.
This is so simple to prepare but yet tasty! This took merely 20 mins to prepare and cook.


3-way Steamed Eggs Recipe
This recipe yields 4 small cups of steamed egg
Ingredients:

3 chicken eggs
1 salted egg
2 century eggs

50ml water
1 tsp soy sauce
Some white pepper


Shi Quan Da Bu Tang (Ten Tonics Nourishment Soup)


I just love to drink Shi Quan Da Bu Tang (Ten Tonics Nourishment Soup). I'll always bug my mum to have my maid boil this cos it's my favourite herbal soup.. However, I'm the only one who loves this soup this madly in my family. I decided to try cooking it myself and I found it almost effortless to prepare! Well of course, the pre-mix helped a lot! This costs about 10 bucks and 3 hours to cook. 


Shi Quan Da Bu Tang (Ten Tonics Nourishment Soup) Recipe
Ingredients:

One pack of Shi Quan Da Bu Tang (Ten Tonics Nourishment Soup) pre-mix
2 litres of water
1 spring chicken (I did not use the entire chicken)
Some salt


Mango Mousse Cake with Toasted Almonds


I finally learned the proper way to perfect a Mango Mousse Cake after my lesson with Richard Goh. I'm glad that this cake was so fun to make and this is especially so after my 2 week hiatus from baking! This cake still has room for improvements since I'm still short of my cake ring.. but it's here in Singapore.. waiting to be delivered to my place! (: 

Nevertheless, this cake took me 3 hours to bake and prepare.
I just love baking layered cakes! 

This recipe is adapted from Richard Goh's Mango Mousse Cake.


Mango Mousse Cake with Toasted Almonds Recipe
Ingredients:

SPONGE CAKE
4 eggs (60g each)
100g sugar
100g plain flour, sifted
100g melted butter

MANGO MOUSSE
3 tbsp water
20g gelatin 
(Bake King is 'weaker' and so I used more.. If it's better brands, can use lesser, like 12g)

100 - 250g Mango puree 
(I like mangoes so I used 250g..)
250g whipped cream 

JELLY TOPPING
400ml water
38g gelatin (Bake King)
80g sugar

3 mangoes 
(I used Thai Mangoes)
40g silvered almonds or 40g toasted diced almond (ready-to-use)

Itchy hands

I burned my hand last Monday while steaming a 9 layer kueh. 
It was pretty bad even though it's recovering well now by the grace of God.

Still, the fav boy has banned me from stepping into the kitchen till the beginning of June so as to let my wound recover completely. The itch to cook and bake is soooooooo strong and it's getting very bad! There's so much I wanna cook and bake! Even the baking session whereby Elijah and I taught some friends how to bake Blueberry Cupcakes and Chocolate Eclairs didn't do much to ease the itch! XD

Can't wait to bake real soon!

Chocolate Chip and Peanut Butter Cookies

Sin Li was craving for some chocolate chip cookies the day we were out and so we headed to my place to bake us some! These Chocolate Chip and Peanut Butter Cookies were pretty simple to bake and were fun to eat! (:


Chocolate Chip and Peanut Butter Cookies Recipe
This recipe yields 30 - 40 small cookies
Ingredients: 

105g castor sugar
57g butter, unsalted
45g corn oil
1 egg
1/4 tbsp milk
128g all purpose flour
1/4 tsp salt
1/4 tsp cream of tartar
1/4 tsp baking soda
2 tsp vanilla extract
80g dark coverture chocolate buttons
40g peanut butter


Vanilla with Chocolate Chip Cupcakes

These Vanilla with Chocolate Chip Muffins were made specially for Ana's mummy (: Am really thankful that she opens her house up for us to have our cell group meeting ever Friday night and especially since she's asked for some simple cupcakes to satisfy her craving, I baked her some (:

These Vanilla with Chocolate Chip Cupcakes are almost effortless as they're the basic of all basics.

This recipe yields 14 cupcakes
Ingredients: 

76g butter, unsalted
43g castor sugar
125g self raising flour
1 egg
80ml cup water
2 tsp vanilla essence
45g dark coverture chocolate buttons


Swiss Roll Bake Meet

Just last Thursday, a few of the Munch Ministry Baking Club ladies gathered at Michelle's to bake Swiss Rolls! The demo by 2 of the ladies really helped us understand how to effectively bake Swiss Rolls! Thank you Neo and Jessey for teaching us! (:

Super Awesome 10 Inch Mega Fruit Tart

Mummy didn't want a cake for Mum's Day so I decided to do her a Super Awesome 10 Inch Mega Fruit Tart! This was a recipe I did earlier on, the Mini Fruit Tarts. I'm really pleased at how pretty this looked and how good it actually tasted even though the custard was a lil' on the milkier side!

This took me about 4 hours to bake and put together 2 Super Awesome 10 Inch Mega Fruit Tart but effectively if you're just aiming to get one done, it should take only 2 hours (: Please halve the recipe if you're intending to just bake 1 tart!

I used the oven to bake this tart but I did try the small tarts with my Happy Call Pan and they baked well even though the tart was not totally brown. It also took a lesser time to bake the tarts but the only limitation is that the maximum size the Happy Call Pan can bake is about 5 inches. If you are baking on the Happy Call Pan, bake the tart on medium-low fire on 20 minutes or till pie crust is completely cooked. If you are baking a 5 inch tart, do use tools such as inverted shallow cupcake cups to "prop up" the tart to prevent 'almost' direct contact of heat. This will prevent the base of your tart from burning before it is cooked.


Super Awesome 10 Inch Mega Fruit Tart Recipe
This yields 2 10 inch fruit tarts
Ingredients:

PIE BASE
500g cake flour
150g icing sugar, sieved
250g butter, softened
150g whole eggs (about 3 medium sized eggs)

Some plain flour (5 tbsp or so)
Some beans for bind baking
(Rice, black beans, red beans, green beans.. any of these will do)

CUSTARD CREAM
10tbsp corn flour
5 egg yolks
12 1/3 tbsp sugar
500ml milk

GELATIN FRUIT GLAZE
100ml apple juice
2 tbsp gelatin

FRUITS
A punnet of strawberries
5 kiwis
A box of blueberries
1/2 can of canned peach
2 laffa limes
