Cynthia's Yoghurt Chiffon Cake - Mango or yuzu for you?

It's the beginning of a new school year! Trying to make the best out of my last day of holidays, I decided to bake 2 chiffon cakes yesterday.. both of which were yoghurt chiffon cakes. Since the flavour is determined by the drink used, I decided to combine them into 1 blog post. 

The cake is absolutely fluffy.

I got 2 new tins from Japan recently so I decided to bake 2 chiffons (: The heart shaped chiffon is 20cm and the round one was baked in a 17cm tin. I'll be sharing the recipe for both proportions in this entry. For variations of the recipe, just use your favourite yoghurt drink. I chose the Mango Yoghurt Smoothie drink and Yuzu Yoghurt Smoothie drink from Magnolia. (yuzu one not in photo though)

The cake takes about 30 mins to prep.. 1 - 1.5 hours to bake and another 30 mins to cool (: I'd rate it a difficulty level 3 out of 5..

Salmon Baked Rice


I've been buying Salmon Trout by the whole from Giant lately and decided to bake a Salmon Baked Rice today, inspired by the baked rice I did previously.

The hubby and I loved it! I guess this recipe is here to stay! 

Essentially, this recipe is made up of a fried rice, canned soup, salmon and cheese. The fried rice can be cooked with whatever you fancy, or whatever you have in your kitchen. Just add in whatever tickles your fancy. 

This recipe yield 2-3 portions or even 4 (if you're small eaters) and it takes about 1.5 to 2 hours in all to whip up, of which most of the time you're just waiting for it to cook. I'd rate it a difficulty level 2 out of 5.

Condensed Milk Cotton Cheesecake



Truth be told, I haven't had much luck with cheesecakes that are baked. This one shared by dearest friend Christina of Baking Mom hits all the right notes! It's so fluffy and yet, it isn't too sweet despite the use of condensed milk. It was a hit with my colleagues who enjoyed it.. so much so that a friend chomped down 2 slices in one sitting! It's best served chilled.

Very nice and fluffy! 

This recipe takes about 2 hour 30 minutes and I'd rate it a difficulty level 3 out of 5.

Baked Chocolate Mooncake

Baked Chocolate Mooncakes.. these have been really popular among many bloggers and of course, my hands itched hearing how a delight they can be! I followed the recipe from Ann's blog and baked them... The dough is infused with cocoa powder, making it special and different from the usual traditional baked mooncakes. I made mine with good old white lotus paste. This dough is easy to work with and I had a lot of fun! I really ought to bake more.. but I've just been so tired that baking takes a second stage to sleeping XD 

Nevertheless, I'd rate this bake as a difficulty level 3 out of 5 and it'll take about 2.5 hours in all to bake a batch of these beauties.. depending on how fast or slow you are..

Cynthia's Strawberry Delight Cheesecake (no-bake)


This recipe for Strawberry Delight is sure to wow your guests as the pretty insides of strawberries are used to line the sides of the cake. This recipe is also relatively simple as it is does not require baking. I'd rate it a difficult level 3 out of 5 and it takes about 2 hour 30 minutes to 'bake'.

Cynthia's Mango Cheesecake


I've probably been too stressed of late.Well, with that, I'm down with Shingles. It really caught me by surprise but there's nothing I can do about it other than rest and take my medicine and apply the cream prescribed by the doctor. Being confined at home is super boring. 

With that, I decided to bake as my hands were itchy. With the mango my dad bought a couple of days ago, I made this Mango Cheesecake. I love the colours and my dad loves mangoes! Fear not, he has gotten chicken pox before so he's safe being near me. It's only infants, children, the elderly, the sick and those who have yet to contact chicken pox that I should avoid. I can't wait to make a full recovery!

Nevertheless, this recipe was fun! I adopted the mango mirror layer from Ann's Mango Mirror Cake but I made slight adjustments to it. 

I'd rate this recipe a difficulty level 4 out of 5 and it takes about 2 h 30 minutes to make all in all. 



Cynthia's Cranberry Cheesecake


I chanced upon these beautiful cranberries in the local supermarket while I was out shopping (yet again!). I decided to try this beautiful version of Cranberry Cheesecake. 


This recipe is relatively simple and I'd rate it a difficulty level 4 out of 5 (only difficulty is getting the layers right) and it takes about 2 hours 30 minutes to complete.

Cynthia's Mango Strawberry Cheesecake


I'm on a cheesecake roll! I decided to bake for my cell group since I'd see them after service tonight. Hence, I made this Mango Strawberry Cheesecake after a short walk in NTUC.

NTUC is like one of the best but yet worst places for me to shop. I simply spend too much money in NTUC! Then again, it makes me happy... (: Anyway, this Mango Strawberry Cheesecake is fun to bake and colourful to boot! (: Do check out the video tutorial at the end of this blog post!

On a side note, something really cheesed me off today. I don't really care if someone wants to use my recipes to sell the cakes for a living. But have some damn decency to BAKE THE CAKE YOURSELF and use the picture of what you have baked for sales. https://www.facebook.com/wendy.lim.165033 obviously doesn't even know how to remove watermarks as she merely CROPPED my images and reposted as hers. Have some integrity woman. That's obviously LYING to your potential customers as you DID NOT BAKE THE CAKES YOURSELF. After being confronted by me, she conveniently BLOCKED me. Woman, is that the best you can do? SHAME ON YOU! 

I'm still considering what I should do to her. I can go all the way and bring her down. But of course, I can be nicer. She still hasn't removed the images. Probably just acting like nothing happened.

Cynthia's Rainbow Strawberry Cheesecake


This Rainbow Strawberry Cheesecake was done last Saturday as a joint birthday celebration with my girls. It was really fun to see all the beautiful colours come together. The most challenging bit of the cake would probably be the pouring of the cream cheese mixture to get the right layering effect.

Cynthia's Ribena Cheesecake


Today, I couldn't wait. I made a Ribena Cheesecake yesterday. 


However, it wasn't strong enough in the Ribena department. Of course, me being me, I could not wait to perfect the recipe. Today, I headed into the kitchen to work on an improved version. Also, I did a video tutorial for it! So instead of the usual photographic step by step recipe, here's a video tutorial recipe (:

Cynthia's Oreo Cheesecake


This has been one of those bakes I've been wanting to try. I may not be able to eat cream cheese but the cake has been well received by those who have taken it! This cake is similar to the Cynthia's Strawberry Cheesecake and Cynthia's Berries Cheesecake which were ultimate hits! They were so highly raved by those who made it and those who were lucky enough to taste it. With that, I made this recipe for Oreo Cheesecake. It does not use whipped cream like most recipes ask for. Instead, it uses yoghurt. As such, the cake is soft and tofu-like (according the Billy) without being sickeningly rich like most cheesecakes. Even my dad loved it so much that he had quite a bit of it! 

Anyway,  I'd rate this recipe a difficult level 3 out of 5 and it takes about 2 - 2.5 hours all in all to prepare.

Luncheon Meat Buns


Luncheon Meat Buns. I used to love the smell and taste of these whenever I am early enough at the neighbourhood bakery in secondary school days before Girls' Brigade on Saturdays. The smell is something I can hardly forget. I bought this bread machine with the intention to bake loads of these luncheon meat buns but as you know me... I'm really good at procrastinating! XD I've also baked a lot of other stuff with the bread machine so this bun sort of got 'forgotten'. As my hands were itchy despite a really long first day back at school for the new school term, I decided to bake these Luncheon Meat Buns.

I had just the right amount of milk for the bread dough but I ran out of milk for the 'wash'! Hence, I tried using some soya bean milk to wash the bread... while keeping my fingers cross. Well, it worked! (: Now we've got another option for our bread 'wash'. 

I'd rate this a difficulty level 2 out of 5 and it takes about 2h 30 mins in all to complete.

Egg Custard Bun


This is my 4th attempt at baking this bread. Previous attempts weren't as successful as the bun was either over baked or that the custard was too little. With some persistence, this Egg Custard Bun has been perfected! (: Do credit my blog if you were to bake this bread with this recipe. After all, I did the trial and error to perfect it and no one else has blogged this recipe as yet. I used the bread recipe from my mixed herb buns and they were really soft and fluffy. A little too soft and fluffy for this recipe. So today, I used the Panda Bread recipe. It worked out much better as it wasn't as soft but the bread was still fluffy and good. 

I'd rate this a difficulty level 3 out of 5 and it takes about 2h 30 mins in all to complete.

Banana Chantilly Chocolat


This cake is an extended version of the Chantilly Chocolat cake with addition of bananas. I used the basketweave technique for this recipe. Video tutorial for this to follow soon! (:
